- 1 cup organic brown sugar
- ¾ cup Eumelia Extra Virgin Olive Oil
- ¾ cup orange juice
- 1 cup water
- 3 cups organic whole wheat flour
- 1 cup organic vegan cocoa powder
- 1 ½ tsp vinegar
- 1 vanilla
- ½ tsp sea salt
- 1 tsp baking soda
- 3 tsp baking powder
- Orange zest from two oranges
- 100 gr organic chocolate
- 50 gr Ygea cranberries
Preheat the oven to 160 °C with the hot air option and oil or butter the baking tray.
In a food processor combine the sugar, the olive oil, the vinegar, the salt and the orange zest. Whisk until the sugar is almost melted.
In bowl dissolve the baking soda in the orange juice. Add also the water and then pour this liquid in the food processor.
Sieve the flour, the baking powder and the cocoa powder and slowly add them in the food processor mixin gently until combined.
Roughly break the chocolate. Combine the chocolate and the cranberries and whisk gently.
Pour the cake mixture in the tray and bake for one hour.
Remove from the tray once the cake cools down.
